Grilled Skirt Steak with Chimichurri Sauce



Ingredients:

- 1 1/2 lb skirt steak

- 1/4 cup olive oil

- 3 cloves garlic, minced

- 1/4 cup chopped fresh parsley

- 1/4 cup chopped fresh cilantro

- 1/4 cup chopped fresh oregano

- 1/4 cup red wine vinegar

- 1/4 tsp red pepper flakes

- Salt and pepper to taste


Instructions:

1. In a small bowl, combine the olive oil, garlic, parsley, cilantro, oregano, red wine vinegar, red pepper flakes, salt, and pepper. Mix well to combine and set aside to let the flavors meld together.


2. Season the skirt steak with salt and pepper on both sides. Place the steak in a shallow dish and pour half of the chimichurri sauce over it. Reserve the other half for serving.


3. Cover the dish with plastic wrap and let marinate in the fridge for at least 30 minutes, or up to 24 hours.


4. Preheat the grill to medium-high heat. Grill the skirt steak for 3-4 minutes per side, or until it reaches your desired level of doneness.


5. Remove the steak from the grill and let it rest for a few minutes before slicing it against the grain.


6. Serve the sliced skirt steak with the reserved chimichurri sauce on the side. Enjoy!
